To prepare the baked cod: Preheat your oven to 400ºF (200ºC). Season cod fillets with salt and pepper. Arrange in a baking dish and drizzle with olive oil.
Bake the cod fillets for 10-15 minutes depending on the thickness of the fillets – until cooked through.
In the meantime, in a small bowl, combine olive oil, lime juice, jalapeño, garlic, scallion, cilantro, red chili pepper flakes, salt, and pepper to taste.
Once cod fillets are cooked, remove them from the oven and drizzle each fillet with the jalapeño mixture. Serve the baked cod fillets immediately, with the remaining sauce on the side. Enjoy!
