Veggie Fried Rice

Ingredients
  

  • 1 tablespoon avocado or coconut oil
  • 1 tablespoon garlic minced
  • 1/2 cup carrot, diced
  • ½ cup onion diced
  • ½ cup bell pepper diced
  • ½ cup broccoli florets
  • ½ cup peas
  • 3 eggs beaten
  • 3 cups brown rice cooked and chilled
  • 2 tablespoons coconut aminos
  • 1 tablespoon sesame oil
  • 1/2 teaspoon pepper to taste

Instructions
 

  • To make the vegetable fried rice: In a wok or deep skillet, heat up the oil over high heat and cook onions, carrots and garlic until onions are translucent. In the meantime, beat the eggs in a bowl.
  • Add bell peppers and broccoli florets and cook for an additional 3 minutes. Push all of the cooked vegetables to the side of the pan.
  • Pour pour the beaten eggs into the cleared half of the pan. Scramble the eggs and combine them with the rest of the veggies.
  • Add peas, rice, coconut aminos, sesame oil, and pepper. Mix well and let the rice cook until slightly crispy.
  • Sprinkle the veggie fried rice with chopped scallions or cilantro. Serve immediately.
