Spiced Maple Cranberry Sauce
Most homemade cranberry sauces are made with sugar, but this one-- flavored with unsweetened applesauce and spices-- gets its sweetness from the maple syrup that's added in after cooking.

- 1 medium orange
- 1/8 cup frozen orange juice not from concentrate-can
- 1 12 ounce package fresh or frozen cranberries
- ½ cup water
- ½ cup unsweetened applesauce
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ½ cup pure maple syrup
Remove 2 teaspoons zest and squeeze 1⁄4 cup juice from orange
In a medium saucepan combine orange juice, frozen orange juice, cranberries, water, applesauce, cinnamon, ginger and nutmeg.
Bring just to boiling; reduce heat. Simmer for 15 minutes or until most of the cranberries pop and mixture is slightly thick, stirring occasionally.
Remove from heat. Stir in maple syrup and orange zest.
Cover and chill at least 30 minutes (sauce will thicken as it chills).
